This chicken is so super simple. Only four ingredients, 1 hour of marinade time and you can cook it in a skillet or on a grill. My husband cooked it in his electric skillet and it was so super flavorful.
Chili Pineapple Chicken
Ingredients:
- 2 pounds boneless skinless chicken breasts
- 1 cup sweet chili sauce
- 1/4 cup pineapple juice
- 1/4 cup honey
Directions:
- In a medium bowl, whisk together the sweet chili sauce, pineapple juice and honey. Reserve 1/4 cup of the sauce and set aside.
- Place the chicken in a resealable bag and pour the remaining sauce over the chicken and refrigerate for 30 minutes to 1 hour.
- Preheat a skillet over medium-high heat. Remove the chicken from the marinade, discard the marinade and place the chicken into the skillet. Cover the skillet and cook the chicken for 5-10 minutes or until browned. Flip the chicken over, cover the skillet again and cook for an additional 5-10 minutes or until the chicken is completely cooked and browned. Brush each side of the chicken with the reserved sauce and cook on each side for an additional minute.
