One skillet meals are perfect for anyone who doesn’t like to do dishes, although does anybody really like to do dishes? I know nobody in my family likes to do them.
This skillet is a complete meal, it has your protein, your starch and your vegetable. If you use white rice it will be ready in about 30 minutes. I used brown rice so it took about 45 minutes.
Cheesy Sausage, Broccoli and Rice Skillet
Ingredients:
- 1/2 tablespoon olive oil
- 14 ounces smoked turkey sausage, sliced
- 1 small yellow onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1/2 teaspoon black pepper
- 1 cup brown rice
- 2 cups low sodium chicken broth
- 2 cups frozen broccoli florets, thawed
- 8 ounces sharp cheddar cheese, shredded
Directions:
- In a large skillet, over medium-high heat, heat the olive oil.
- Add in the sausage and cook until browned on both sides, about 3-4 minutes per side. Using a slotted spoon transfer the sausage to a bowl.
- Add in the onions and peppers and cooked until softened and onions are translucent, scraping the browned bits off the bottom of the skillet.
- Add in the garlic and cook stirring constantly for 1 minute. Season with black pepper.
- Add the rice to the skillet and stir constantly for about 2 minutes.
- Pour in the chicken broth and bring the mixture to a boil. Cover the skillet and reduce the heat to low. Cook for 30-45 minutes or until the rice is cooked and no liquid remains. During the last 5 minutes of cooking time, add the broccoli to the top of the rice without disturbing the rice. Cover the skillet again.
- Stir in the sausage and 1 cup cheese. Top with the remaining cheese and cover the skillet. Let sit for 2-3 minutes or until the cheese has melted.
