Cannoli Pancakes

Cannoli Pancakes: Savory Sweet and Satisfying

After my success with Cannoli Stuffed French Toast I decided to try some cannoli pancakes. What a delicious way to start the day and so easy. I made some basic homemade pancakes for this breakfast, but you could use box mix if that is your preference. This recipe is all about the delicious cannoli filling that is layered in between the pancakes.

Cannoli Pancakes

Ingredients:

Pancakes

  • 2 cups all purpose flour
  • 1/4 cup granulated sugar
  • 2 tablespoons baking powder
  • 2 cups milk
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsalted butter, melted

Cannoli Filling

  • 1/2 cup heavy whipping cream
  • 15 ounces whole milk ricotta cheese
  • 1/2 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 1/3 cup mini chocolate chips

Directions:

  1. In a small bowl, using an electric mixer, beat the whipping cream until stiff peaks form. Set aside.
  2. In a large mixing bowl, add in the ricotta cheese, powdered sugar, vanilla and cinnamon. Using an electric mixer on medium speed, mix until well combine, about 1 minute. 
  3. Fold in the whipped cream and chocolate chips. Refrigerate until needed.
  4. Preheat a griddle and lightly grease.
  5. In a large bowl, whisk together the flour, sugar, baking powder.
  6. Add in the milk, eggs and vanilla. Whisk until just combined.
  7. Pour in the butter and whisk just until the butter is evenly incorporated.
  8. Pour 1/4 cup of batter onto the preheated griddle and cook for 3-4 minutes or until bubbles form and start to pop and the pancakes are golden brown on the bottom.
  9. Flip the pancakes over and cook for 3-4 minutes or until the bottoms are golden brown.
  10. Continue this process until you have used all of the batter. Allow the pancakes to cool a bit before adding the cannoli filling or it will melt.
  11. Place a pancake on a plate and spread with desired amount of cannoli filling. Place another pancake on top and spread with desired amount of cannoli filling. You can continue to layer pancakes and filling until you reach your desired number of pancakes, ending with cannoli filling on top.
