Cannoli Stuffed French Toast

Cannoli Stuffed French Toast: Savory Sweet and Satisfying

I love cannoli's and interestingly, I recently learned that cannoli means more than one and cannolo means one, so I guess I love cannoli. Taking the cannoli filling and putting it in between two pieces of french toast, is genius and oh so delicious. 

Cannoli Stuffed French Toast

Ingredients:

  • 1 cup ricotta cheese
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1/3 cup semi-sweet mini chocolate chips
  • 2 eggs
  • 1/4 cup heavy cream
  • 4 slices French bread
  • 2 tablespoons unsalted butter
  • powdered sugar

Directions:

  1. In a small bowl, stir together the ricotta, powdered sugar and vanilla. Stir in the mini chocolate chips.
  2. In a shallow bowl, whisk together the eggs and heavy cream.
  3. Divide the ricotta mixture between two slices of bread and spread out onto the bread. Place another slice of bread on top and gently press down.
  4. In a large skillet, melt the butter over medium heat.
  5. Carefully dip both sides of the sandwiches into the egg mixture, coating both sides well. Add the sandwiches into the skillet and cook until golden brown, about 4-5 minutes. Carefully flip the french toast over and cook on the other side until golden brown, about 4-5 minutes.
  6. Transfer the french toast to a plate and dust with powdered sugar.
