I love cannoli's and interestingly, I recently learned that cannoli means more than one and cannolo means one, so I guess I love cannoli. Taking the cannoli filling and putting it in between two pieces of french toast, is genius and oh so delicious.
Cannoli Stuffed French Toast
Ingredients:
- 1 cup ricotta cheese
- 1/4 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 1/3 cup semi-sweet mini chocolate chips
- 2 eggs
- 1/4 cup heavy cream
- 4 slices French bread
- 2 tablespoons unsalted butter
- powdered sugar
Directions:
- In a small bowl, stir together the ricotta, powdered sugar and vanilla. Stir in the mini chocolate chips.
- In a shallow bowl, whisk together the eggs and heavy cream.
- Divide the ricotta mixture between two slices of bread and spread out onto the bread. Place another slice of bread on top and gently press down.
- In a large skillet, melt the butter over medium heat.
- Carefully dip both sides of the sandwiches into the egg mixture, coating both sides well. Add the sandwiches into the skillet and cook until golden brown, about 4-5 minutes. Carefully flip the french toast over and cook on the other side until golden brown, about 4-5 minutes.
- Transfer the french toast to a plate and dust with powdered sugar.
