Baked Vanilla Chai Oatmeal: Savory Sweet and Satisfying

It's been awhile since I have made a new oatmeal recipe and this one was worth the work it took. However for you it will be easy to make.

Baked Vanilla Chai Oatmeal: Savory Sweet and Satisfying

Whenever I make a new recipe, I do not like to have leftover ingredient mixes. Like with this recipe, it called for 2 teaspoons of this homemade chai spice mix. I did not want to have a bunch of the spice mix leftover. So that meant I had to reduce the spices in the mix to make just enough for the recipe. Once I  figured that out this recipe was super easy to make.

Baked Vanilla Chai Oatmeal: Savory Sweet and Satisfying

The spices in this oatmeal add a warmth to it that sure to warm you up on these chilly mornings. Plus it has a bit of sweetness from the maple syrup and delicious toppings.

Baked Vanilla Chai Oatmeal

Ingredients:

  • 1 1/2 cups old fashioned rolled oats
  • 1/2 cup toasted almonds, finely chopped
  • 2 tablespoons maple syrup
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon cardamon
  • scant 1/2 teaspoon ground cloves
  • 1/4 teaspoon ground coriander
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon black pepper
  • 1/2 cup dried cranberries
  • 2 cups milk
  • 1 cup heavy cream
  • 2 teaspoons vanilla extract
  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon ground cinnamon

Directions:

  1. Preheat the oven to 350º F. Spray a 9 inch square baking dish with cooking spray.
  2. In a large bowl stir together the oats, toasted pecans, maple syrup, spices and cranberries. Pour in the milk, heavy cream, vanilla and melted butter, stir until well combined. Pour the mixture into the prepared baking dish.
  3. In a small bowl stir together the sugar and cinnamon. Evenly sprinkle over the oats. 
  4. Bake for 30-40 minutes.

Notes:
If you want to reduce the calories in this oatmeal, you can use half and half instead of heavy cream.
