Pepper Jack Macaroni and Cheese: Savory Sweet and Satisfying

I love experimenting with different varieties of homemade mac and cheese, especially when it involves some type of spiciness.
 
Pepper Jack Macaroni and Cheese: Savory Sweet and Satisfying

This one combines two different types of cheese, plus some cream cheese, making it a creamy and super cheesy. To make it even better, it is ready in just about 30 minutes.

Pepper Jack Macaroni and Cheese

Ingredients:

  • 16 ounces elbow macaroni
  • 1 stick butter, cut into tablespoon pieces
  • 2 1/4 cups half and half
  • 1 egg, lightly beaten
  • 4 ounces cream cheese
  • 8 ounces sharp cheddar cheese, shredded
  • 8 ounces pepper jack cheese, shredded
  • 1/2 teaspoon paprika
  • 1/4 teaspoon dried parsley
  • 1/4 teaspoon red pepper flakes
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon mustard powder
  • 1/4 teaspoon black pepper

Directions:

  1. Turn the oven on to broil. Spray a 9x13 inch baking dish with cooking spray.
  2. Cook the pasta according to the package directions and drain. Return the pasta to the pot and add in the butter, Stir until the butter has melted and is well mixed with the pasta.
  3. Meanwhile, in a medium pot, over low heat, add in the half and half and the egg, whisking together immediately. Add in the cream cheese and continue to whisk while it melts.
  4. Once the cream cheese has completely melted, add in 4 ounces of cheddar cheese and pepper jack cheese, whisking until completely melted. Add in all of the spices and whisk until well combined.
  5. Pour the cheese sauce over the pasta and stir until well mixed. 
  6. Transfer half of the pasta into the prepared baking dish. Top with half of the cheddar and pepper jack cheese, about 2 ounces each. Add the rest of the pasta to the baking dish and sprinkle with the remaining cheddar and pepper jack cheese.
  7. Place the baking dish under the broiler and broil just until the cheese has melted and starting to brown, about 2-3 minutes.
