This is definitely a family favorite meal, especially for my girls who are big fans of ranch dressing. So much so I buy the twin pack giant bottles from Costco.
This chicken is perfect for those busy weeknights. It comes together quickly, because it is as easy as season the chicken, mix together the ranch mixture, pour over the chicken and bake. That is, if you remember to defrost the chicken first, which of course I never do.
Baked Ranch Bacon Chicken
Ingredients:
- 4 boneless skinless chicken breasts
- 1 cup grated parmesan cheese
- black pepper, to taste
- 1 1/2 cups ranch dressing
- 1/2 cup sour cream
- 1/4 cup cooked and crumbled bacon
Directions:
- Preheat the oven to 375º F. Spray a 9x13 inch baking dish with cooking spray.
- Sprinkle both sides of the chicken breasts with black pepper and 1/2 cup parmesan cheese. Place the chicken breasts into the prepared baking dish.
- In a medium bowl, whisk together the ranch dressing and sour cream. Pour over the chicken breast and sprinkle with remaining 1/2 cup parmesan cheese.
- Bake for 20-30 minutes or until the chicken is completely cooked.
- Turn the oven to broil and broil the chicken breasts for about 2-3 minutes or until golden. Watch so the chicken does not burn.
- Remove from the oven and sprinkle with the crumbled bacon.
