Mashed Red Skin Potatoes: Savory Sweet and Satisfying

Mashed Red Skin Potatoes: Savory Sweet and Satisfying

These potatoes are super easy, especially since you do not have to peel the them. You can peel the potatoes if you would like, but I enjoy the skin in these mashed potatoes. Also, leaving the peels on lets others know that they are red skin potatoes.

Directions:

  1. Scrub the potatoes and cut into 2 inch pieces.
  2. Place the potatoes into a large pot and cover with cold water. Cover the pot and bring to a boil over high heat.
