I love some good creamy mashed potatoes. I happened to have some red potatoes leftover from a different recipe and decided it would be a good idea to have a recipe for a basic red skin mashed potatoes. Plus, I can almost always go for some mashed potatoes.
These potatoes are super easy, especially since you do not have to peel the them. You can peel the potatoes if you would like, but I enjoy the skin in these mashed potatoes. Also, leaving the peels on lets others know that they are red skin potatoes.
Mashed Red Skin Potatoes
Ingredients:
- 3 pounds red potatoes
- 1/2 cup unsalted butter, softened
- 1 cup milk, warmed
- black pepper, to taste
Directions:
- Scrub the potatoes and cut into 2 inch pieces.
- Place the potatoes into a large pot and cover with cold water. Cover the pot and bring to a boil over high heat.
- Once it comes to a boil, uncover the pot and allow to boil over medium-high heat until the potatoes are fork tender, about 25 minutes. Drain the potatoes and return them to the pot.
- Add in the butter and milk and mashed to potatoes until the butter and milk are incorporated and the potatoes are mashed to your desired texture. Season with black pepper.
