The name of these pancakes very accurately describe the pancakes. But they don't describe how delicious the pancakes are, even with whole wheat flour.
Whole wheat flour may be healthier than all purpose, but when cooking with it, it can leave your food dense and nobody wants dense pancakes. These pancakes are anything but dense, they are fluffy with a subtle banana taste, a little sweet and a little tart.
Dark Chocolate, Raspberry and Banana Whole Wheat Pancakes
Ingredients:
- 1 egg
- 1 cup milk
- 6 tablespoons non fat Greek yogurt
- 1/2 cup mashed ripe banana
- 1 teaspoon vanilla extract
- 2 tablespoons brown sugar
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1 1/2 cups whole wheat flour
- 6 tablespoons dark chocolate chips
- 6 tablespoons frozen raspberries, cut in half
Directions:
- Preheat a griddle over medium heat.
- In a large bowl, whisk together the egg and milk, until frothy and well mixed.
- Whisk in the yogurt, banana, vanilla and brown sugar.
- Stir in the baking powder and cinnamon.
- Stir in the whole wheat flour.
- Fold in the chocolate chips and raspberries. Fold just until incorporated, otherwise the raspberries will bled into the batter.
- Grease the griddle with either butter or olive oil. Scoop out the batter using a 1/4 measuring cup and place on the griddle. Cook until golden brown on the bottom and bubbles form on the surface, about 2 minutes. Flip the pancakes over and cook on the other side until golden brown.

You can use fresh raspberries instead of frozen.
