Wow, this pasta packs a spicy kick and I loved it. To make this pasta even better, it is ready to eat in less than 30 minutes.
The original recipe called for spinach, but I had some kale leftover from another recipe so I used that instead. If spicy dishes are not your thing you can always reduce the amount of cayenne pepper and red pepper flakes or leave them out completely and you will still have a creamy pasta dish.
Chicken Diavolo Pasta
Ingredients:
- 12 ounces bow tie pasta
- 1 pound boneless skinless chicken breasts
- 2 tablespoons olive oil
- 1/2 teaspoons cayenne pepper
- 1/4 cup unsalted butter, cubed
- 2 teaspoons minced garlic
- 1 1/2 cups heavy cream
- 1/2 teaspoon crushed red pepper flakes
- 1 1/2 cups shredded parmesan cheese
- 2 cups spinach or kale, chopped
- 6 ounces sun dried tomatoes, drained and chopped
Directions:
- Cook the pasta according to the package directions and drain well.
- Cut the chicken into bite size pieces.
- In a large sauté pan, add in the oil and cayenne pepper, swirl to combine. Heat over medium heat and add the chicken. Cook stirring occasionally until the chicken is completely cooked, about 8 minutes.
- Reduce the heat to medium low and add in the butter and garlic. Cook stirring constantly until the butter is melted, about 1-2 minutes. Add in the heavy cream and crushed red pepper flakes. Simmer for 5 minutes, stirring occasionally.
- Reduce the heat to low and add in the parmesan cheese, stirring until the cheese has melted.
- Stir in the kale or spinach, sun dried tomatoes and pasta.
