Broccoli Chicken Casserole: Savory Sweet and Satisfying

A pasta casserole with chicken and broccoli in a homemade creamy, cheesy mushroom sauce. I love that this dish has a homemade sauce and does not used canned condensed soup. Now don't get me wrong, I use my fair share of the canned soups, but it is much healthier to make the sauce from scratch.

Broccoli Chicken Casserole

Ingredients:

  • 8 ounces rotini pasta
  • 2 tablespoons unsalted butter
  • 1 small yellow onion, finely diced
  • 8 ounces baby bella mushrooms, thinly sliced
  • 4 cloves garlic, minced
  • 3 tablespoons all purpose flour
  • 1 cup low sodium chicken stock
  • 1 1/2 cups milk
  • 1 teaspoon dijon mustard
  • 1/4 teaspoon black pepper
  • 8 ounces sharp cheddar cheese, shredded
  • 1 pound frozen broccoli florets, thawed
  • 2 cups diced cooked chicken

Directions:

  1. Preheat the oven to 400º F. Lightly spray a 9x13 inch baking dish with cooking spray.
  2. Cook the pasta according to the package directions and drain well and return to the pot.
  3. Meanwhile, in a large skillet, over medium-high heat, melt the butter. Add in the onions and sauté for 3 minutes, stirring occasionally. Add in the mushrooms and sauté for 5 minutes, stirring occasionally. Add in the garlic and stir for 1 minute.
  4. Sprinkle the flour over the onion and mushroom mixture and cook, stirring constantly for 2 minutes. Slowly pour in the stock, while stirring constantly. Add in the milk, dijon mustard and black pepper, stirring until well combined. Cook, stirring constantly until the sauce starts to simmer. Remove the skillet from the heat and stir in 1 cup of cheese, stirring until the cheese is completely melted and combined.
  5. To the pasta in the pot, add the broccoli, chicken and sauce, stir until well combined. Transfer to the prepared baking dish and smooth into an even layer.
  6. Bake, uncovered for 15 minutes. Sprinkle with the remaining cheese and bake for 10 an additional minutes, or until the cheese has melted.
