A marinade with lots of flavor and a spicy kick. You can adjust the amount of spiciness by using less sriracha.
The longer you let the chicken marinade, the more flavor it will have, but don't let it marinade too long or the lime juice will start to "cook" the chicken. The outside of the chicken may turn white, but the chicken will still be fine. I would not recommend marinading the chicken longer than 48 hours.
Spicy Honey Lime Chicken
Ingredients:
- 2 1/2 pounds boneless skinless chicken breasts
- 1/2 teaspoon cornstarch
Marinade
- 3 tablespoons low sodium soy sauce
- 6 tablespoons honey
- 1 teaspoon lime zest
- 3 tablespoons lime juice
- 4 cloves garlic, minced
- 1/2 tablespoon ground ginger
- 1 tablespoon vegetable oil
- 1 1/2 tablespoons sriracha
Directions:
- In a small bowl, whisk together all of the marinade ingredients.
- Add the chicken to a sealable bag or container and pour in half of the marinade, about 1/2 cup. Coat the chicken in the marinade and allow to marinade for 6-24 hours in the refrigerator.
- Cover and refrigerate the remaining marinade until needed.
- Heat a large skillet over medium-high heat.
- In a microwave bowl whisk the cornstarch into the remaining marinade and microwave for 1 minute.
- Remove the chicken from the marinade and place into the preheated skillet. Discard the marinade. Cook the chicken until browned, about 8 minutes, basting 1-2 times. Flip the chicken over and cook on the other side until the chicken is completely cooked, basting 1-2 times.
- Drizzle any remaining marinade over each serving, if desired.
