French toast sticks are never something I think to make, it just seems simpler to do a whole slice of bread instead. However in reality, cutting slices of bread does not take that much extra time, especially if you do several slices at a time. My kids loved the sticks and have asked if I can make regular french toast with sticks. Even though they liked the pumpkin flavor they both agreed "regular or normal" french toast is better.
Pumpkin French Toast Sticks
Ingredients:
- 1 loaf Texas toast bread
- 4 eggs
- 2/3 cup milk
- 1/2 cup pumpkin puree
- 1 1/2 teaspoons vanilla extract
- 1 teaspoon ground cinnamon
- 1 teaspoon pumpkin pie spice
- unsalted butter
Cinnamon Sugar Coating
- 1/4 cup granulated sugar
- 1 1/2 teaspoons ground cinnamon
Directions:
- Cut each slice of bread into three sticks.
- In a medium bowl, whisk together the eggs, milk, pumpkin, vanilla, cinnamon and pumpkin pie spice.
- In a large non-stick skillet, over medium heat, melt a bit of butter.
- Dip the bread pieces into the egg and milk mixture and coat both sides. Place into the hot skillet and cook until golden brown, about 2 minutes. Flip over and cook on the other side until golden brown, about 2 minutes.
- Meanwhile, in shallow bowl, mix the cinnamon and sugar coating together.
- Remove the french toast stick from the skillet and immediately coat both sides in the cinnamon sugar.
- Repeat with the remaining pieces of bread.
