Pumpkin French Toast Sticks

Pumpkin French Toast Sticks: Savory Sweet and Satisfying

French toast sticks are never something I think to make, it just seems simpler to do a whole slice of bread instead. However in reality, cutting slices of bread does not take that much extra time, especially if you do several slices at a time. My kids loved the sticks and have asked if I can make regular french toast with sticks. Even though they liked the pumpkin flavor they both agreed "regular or normal" french toast is better.

Pumpkin French Toast Sticks

Ingredients:

  • 1 loaf Texas toast bread
  • 4 eggs
  • 2/3 cup milk
  • 1/2 cup pumpkin puree
  • 1 1/2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pumpkin pie spice
  • unsalted butter

Cinnamon Sugar Coating

  • 1/4 cup granulated sugar
  • 1 1/2 teaspoons ground cinnamon

Directions:

  1. Cut each slice of bread into three sticks.
  2. In a medium bowl, whisk together the eggs, milk, pumpkin, vanilla, cinnamon and pumpkin pie spice.
  3. In a large non-stick skillet, over medium heat, melt a bit of butter.
  4. Dip the bread pieces into the egg and milk mixture and coat both sides. Place into the hot skillet and cook until golden brown, about 2 minutes. Flip over and cook on the other side until golden brown, about 2 minutes. 
  5. Meanwhile, in shallow bowl, mix the cinnamon and sugar coating together.
  6. Remove the french toast stick from the skillet and immediately coat both sides in the cinnamon sugar.
  7. Repeat with the remaining pieces of bread.
