I have been having the hardest time finding orzo in the stores lately. I think the next time I find it in stock, I will have to buy a few extra boxes.
Orzo may look like rice, but it is actually pasta. This recipe creates a creamy and cheesy pasta side dish that can be on the table in about 15-20 minutes.
Creamy Garlic Parmesan Orzo
Ingredients:
- 2 tablespoons olive oil
- 2 cups orzo
- 2 cups vegetable broth
- 4 tablespoons unsalted butter
- 1/4 cup diced yellow onion
- 3 cloves garlic, minced
- 3/4 cup shredded parmesan cheese
- 1/3 cup half and half
- 1 teaspoon dried basil
- black pepper
Directions:
- In a large skillet, over medium-high heat, heat the olive oil, about 1 minute. Add in the orzo and gently stir it around. Continue to stir the orzo constantly until it starts to turn golden brown, about 3-5 minutes.
- Once the orzo starts to turn golden brown, stir in 1/2 cup broth. Stir constantly until the broth has been absorbed. Pour in the rest of the broth and stir well. Bring the mixture to a boil, stirring often.
- Once the mixture reaches a boil, reduce the heat to a simmer. Cover the skillet and allow to simmer for 10-15 minutes or until the broth has been absorbed.
- Meanwhile, in a small saucepan over medium heat, melt the butter. Add in the diced onions and garlic. Season with black pepper and allow to cook for 2-3 minutes, stirring occasionally.
- Once the onions have softened, pour in the half and half, cheese and basil. Season with black pepper again, if desired.
- Pour the creamy garlic sauce over the cooked orzo and stir until well combined.
