I normally use romaine lettuce when I make salads, because my kids are not fans of spinach as the base of a salad. Basically, my kids will eat spinach if they can't taste it. This salad was a nice change of pace. The sweet fruit mixed with the crunchy almonds and chewy dried cranberries made for a salad I wanted to keep eating. It was light and refreshing, yet filling at the same time. My husband absolutely fell in love with the homemade dressing and when I say love, I mean love. He couldn't stop talking about the dressing and how much he loved it.
Strawberry Orange Spinach Salad with Chicken
Ingredients:
Salad
- 4 cups baby spinach
- 2 1/2 cups diced cooked chicken
- 1 cup sliced strawberries
- 1 cup mandarin oranges, drained
- 1/4 cup dried cranberries
- 1/3 cup sliced almonds
- 1/4 cup shredded mozzarella cheese
Honey Balsamic Vinaigrette
- 1/4 cup balsamic vinegar
- 1/4 cup olive oil
- 1 tablespoon minced garlic
- 2 tablespoons honey
- 1/2 teaspoon black pepper
Directions:
- Place the spinach into a large salad bowl. Add in the remaining salad ingredients and gently toss to mix.
- Add all of the vinaigrette ingredients into a mason jar. Put the lid on the jar and shake vigorously.
- Serve the salad and top each serving with the vinaigrette.

Notes:
The vinaigrette will separate as it sits, just give it another shake to remix the ingredients.
