I love corned beef! Having it once a year is just not enough for me. Being able to use it in a salad is a perfect way for me to enjoy it more than once a year.
This salad is perfect for someone who loves corned beef. Especially if they love a good reuben sandwich, since this salad is essentially a reuben sandwich in salad form. You have the corned beef, the sauerkraut, the Swiss cheese, the thousand island dressing and even the pumpernickel or rye bread.
Reuben Salad
Ingredients:
- 9 ounces romaine lettuce, chopped
- 14 ounces coleslaw mix
- 16 ounce can sauerkraut, well drained
- 12 ounces corned beef, chopped
- 8 ounces Swiss cheese, cubed
- 16 ounces grape tomatoes, halved
- 8 thick cut slices pumpernickel or rye bread, cubed
- 2 tablespoons unsalted butter, melted
- black pepper
- thousand island dressing
Directions:
- Preheat the oven to 350º F.
- Add the cubed bread to a large bowl and drizzle with melted butter. Season with black pepper and gently toss to coat.
- Spread the bread cubes onto a baking sheet and bake for about 5 minutes.
- In a large salad bowl toss together the lettuce and coleslaw. Add the remaining ingredients and toss to mix.
- Top each serving with some croutons and dressing.
