Honey Hot Chicken Salad

Honey Hot Chicken Salad: Savory Sweet and Satisfying
 
When I am meal planning and I decided to make a salad, that one salad turns into about a week of salads. I buy my lettuce at Costco, it is such a deal there, but there are 6 heads of romaine lettuce in a pack. So that means we are eating salads until we finish the pack. 

Honey Hot Chicken Salad: Savory Sweet and Satisfying

The chicken is what really makes this salad. It's a little spicy and a little sweet. I could have eaten the chicken by itself, it was so good. 

Honey Hot Chicken Salad

Ingredients:

  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 1/3 cup brown sugar
  • 8 cloves garlic, divided and minced
  • 1 tablespoon rice vinegar
  • 1/4 cup water
  • 1 tablespoon cornstarch
  • 1/4 cup hot sauce
  • 2 boneless skinless chicken breasts, cooked and diced
  • 1 head romaine lettuce, chopped
  • 3-6 tablespoons ranch dressing
  • 1/2 medium red onion, diced
  • 1 red bell pepper, diced
  • 1/2 cucumber, diced
  • 2 ounces cheddar cheese, shredded

Directions:

  1. In a small saucepan, whisk together the soy sauce, honey, brown sugar, 5 cloves garlic and rice vinegar. 
  2. In a small bowl, stir together the water and cornstarch. Stir until cornstarch until completely dissolved. Stir this mixture into the saucepan.
  3. Heat the saucepan over medium heat and bring to a boil, whisking often. Once the mixture reaches a boil, reduce the heat a little bit and let boil for 5 minutes.
  4. Remove the saucepan from the heat and stir in the remaining minced garlic. Allow the mixture to cool slightly.
  5. Once the mixture has cooled slightly, in a medium bowl, stir together 1/4 cup of the sauce and the hot sauce. Add in the chicken and stir until well coated.
  6. In a large salad bowl, stir together the lettuce and the ranch dressing. Add in the chicken and the remaining toppings.
  7. Serve with additional ranch if desired. It will help cut the spiciness if needed.
