There is this store in Northern Michigan that I visit every summer and usually spend a bit of money. It's called American Spoon Foods and they sell the most delicious stuff. If I had to categorize the stuff they sell I would say condiments. A good portion is jams and jellies, but they sell flavors or varieties that you would not find in the grocery store and they taste a million times better. This year my husband and I tried their wildflower honey mustard and it is the best honey mustard I have ever had, so good that we bought two jars. They also had a recipe card to use the mustard in a salad. This is that salad and the honey mustard made the best dressing for this salad.
American Spoon Foods Honey Mustard Cobb Salad
Ingredients:
- 8 cups mixed lettuce
- 1 pint grape tomatoes, halved
- 1/4 red onion, thinly sliced
- 1 cucumber, diced
- 4 boneless skinless chicken breasts, cooked and diced
- 6 hard boiled eggs, peeled and quartered
- 6 slices bacon, cooked and crumbled
Honey Mustard Dressing
- 1/3 cup Wildflower Honey Mustard
- 2 1/2 tablespoons red wine vinegar
- 1/3 cup olive oil
Directions:
- In a large salad bowl, add in the lettuce and top with the remaining ingredients.
- In a medium bowl, whisk together the honey mustard and red wine vinegar. Slowly drizzle in the olive oil, while whisking. Continue to whisk until the dressing becomes creamy.
- Serve the salad and pour some dressing over top each serving.
