Pancake dippers makes eating pancakes fun. Who wouldn’t like to use their hands to dip their pancakes and eat them. Plus the dipping possibilities are almost endless.
Bacon Pancake Dippers
Ingredients:
- 12 slices bacon
- 2 cups all purpose flour
- 2 teaspoons baking powder
- 1 tablespoon granulated sugar
- 2 eggs
- 2 cups milk
- 2 tablespoons unsalted butter, melted and cooled
Directions:
- Cook the bacon until crispy. Set aside on a paper towel lined plate.
- Heat a griddle over medium-low heat.
- In a large bowl, whisk together the flour, baking powder and sugar.
- In another large bowl, whisk together the eggs and milk. Then stir in the melted and cooled butter.
- Add the wet ingredients to the dry and gently stir, just until everything is incorporated, lumps are okay.
- Pour the batter into a glass measuring cup. This will make it easier to pour the batter out.
- Grease the griddle.
- Pour the batter into a long oval shape just slightly longer and wider than the bacon. Place a slice of bacon into the middle of the batter and lightly push down into the batter. Pour a little more batter over the bacon. You do not need to completely cover the bacon, just enough to protect the bacon when you flip the pancake.
- Cook until the bottoms are golden brown, about 2-4 minutes.
- Flip pancakes over and cook until the bottoms are golden brown.
