Sweet Thai Chili Chicken Stir Fry: Savory Sweet and Satisfying

Slowly but surely I am increasing my collection of Asian foods, which I think makes my husband happy. Growing up I did not like it when my parents got Chinese food for dinner, thankfully it did not happen often. Now I've learned to enjoy these types of foods. I will never like them as much as my husband does, I swear he could eat it everyday!

This stir fry is a little sweet, a little spicy and completely delicious. Serve it over some rice and you have a filling dinner. 

Sweet Thai Chili Chicken Stir Fry

Ingredients:

  • 2 pounds boneless skinless chicken breasts
  • 1/4 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 3 tablespoons cornstarch
  • 4 tablespoons canola oil
  • 2 bell peppers, sliced
  • 2 cups frozen green beans, thawed
  • 1/2 tablespoon minced garlic
  • 1/4 teaspoon ground ginger
  • 1 teaspoon crushed red pepper flakes
  • 1/8 teaspoon sesame oil
  • 1 1/4 cup sweet chili sauce
  • 3 cups cooked brown rice

Directions:

  1. Dice the chicken into small cubes/pieces and pat dry with paper towels. Place the chicken into a large bowl and pour 1 tablespoon canola oil over top and mix until all chicken pieces are coated. Sprinkle the chicken pieces with the black pepper and garlic powder, rub the spices into the chicken pieces. Sprinkle the cornstarch over top and mix until all of the chicken pieces are well coated in the cornstarch.
  2. In a large skillet, over medium-high heat, heat 3 tablespoons of canola oil. Working in small batches, you do not want to overcrowd the pan, add some chicken pieces to the hot oil. Turn the chicken pieces often so they cook evenly. Once the chicken is crispy, remove from them from the skillet and place on a paper towel lined plate. Add more oil if the skillet is dry and continue to cook  the chicken until it is all cooked.
  3. Add the sliced bell peppers to the skillet and sauté until your desired tenderness. 
  4. Meanwhile pat the green beans dry with paper towel.
  5. Add the garlic to the skillet and cook stirring constantly until fragrant, about 1 minute. Return the chicken to the skillet and add the green beans, sweet chili sauce, sesame oil, ginger and red pepper flakes. Stir to combine until everything is coated in the chili sauce.
  6. Serve immediately over rice.
