Bacon Hash Brown Casserole: Savory Sweet and Satisfying

One of my pet peeves with cooking is recipes that call for partial bags of ingredients. It means I end having to find ways to use those partial bags of ingredients, which always leads to more partial bags. It sometimes seems like a never ending process.

With this casserole, the original recipe called for 6 cups, about 22 ounces of shredded hash browns. That would leave me with 8 ounces leftover. I have never come across a recipe that uses such a small amount of hash browns, normally it is either a whole or half bag. So I made it my mission to rework the recipe to use a whole bag of has browns. After a few attempts I made it work!

Bacon Hash Brown Casserole: Savory Sweet and Satisfying

The casserole is creamy, cheesy and a perfect side dish because it includes a vegetable. Cook up a vegetable while the casserole bakes and your dinner is done.

Bacon Hash Brown Casserole

Ingredients:

  • 8 slices bacon, chopped
  • 3/4 cup diced yellow onion
  • 2 cans cream of mushroom soup
  • 1 1/4 cup sour cream
  • 8 tablespoons unsalted butter, melted
  • 30 ounces frozen shredded hash brown, thawed
  • 4 cups broccoli florets
  • 1/2 cup green onions
  • 8 ounces sharp cheddar cheese, shredded
  • black pepper, to taste
  • 1/3 cup panko bread crumbs

Directions:

  1. Preheat the oven to 350º F. Spray a 9x13 inch baking dish with baking spray.
  2. In a skillet, over medium heat, cook the bacon and onion until the bacon is crispy. Drain any fat.
  3. In a large bowl, add the bacon and onion mix along with the mushroom soup, sour cream, 4 tablespoons melted butter, thawed hash browns, broccoli, green onions, cheese and black pepper.  Stir to mix well. Transfer the mixture to the prepared baking dish and spread into an even layer.
  4. In a small bowl, stir together the remaining 4 tablespoons melted butter and panko. Sprinkle on top of the potato mixture.
  5. Bake for 45 minutes or until the casserole is hot and panko is golden brown.
