Creamy Bacon Chicken

Creamy Bacon Chicken: Savory Sweet and Satisfying

I love chicken and pasta with a good cream sauce. Cream sauces may not be the healthiest, but man do they taste good. For this chicken I doubled the sauce ingredients because I wanted to make sure there was enough sauce to serve over the chicken over noodles. Besides being so delicious, this recipe is ready in about 30 minutes.

Creamy Bacon Chicken

Ingredients:

  • 8 ounces spaghetti noodles
  • 6 strips bacon
  • 2 large boneless skinless chicken breasts
  • 1/2 cup all purpose flour
  • 1/4 teaspoon garlic powder
  • black pepper, to taste
  • 1 cup low sodium chicken broth
  • 1 teaspoon lemon juice
  • 2 tablespoons unsalted butter
  • 2 cups heavy whipping cream

Directions:

  1. Cook the pasta according to the package directions and drain,
  2. In a large skillet, over medium-high heat, cook the bacon until crispy. Remove the bacon from the skillet and place on a paper towel lined plate. Remove all but 2 tablespoons of bacon fat.
  3. While the bacon cooks cut the chicken breasts in half lengthwise, creating 4 chicken breasts. Sprinkle both sides of the chicken with garlic powder and black pepper. Place the flour into a shallow bowl.
  4. Once the bacon is done, coat both sides of the chicken breasts in flour and place into the skillet. Cook until golden brown, about 4-5 minutes. Flip the chicken over and cook until golden brown on the other side, about 4-5 minutes. Remove the chicken and set aside. Chicken will not be completely cooked, it will finish cooking in the sauce.
  5. Add the chicken broth, lemon juice and butter into the skillet, stirring to scrap up the browned bits. Allow the mixture to boil and cook until it is reduced by half, about 3-4 minutes, stirring occasionally.
  6. Stir in the cream. Once the mixture starts to boil, add the chicken back into the skillet and crumble the bacon over top. Cook for 5 minutes, or until the chicken is completely cooked, stirring occasionally, and the sauce has reduced to your liking.
  7. Serve the chicken and sauce over the noodles.

I used turkey bacon.
