Creamy Turkey Pasta


I don't know about all of you, but I am so ready for spring weather. I am so over this cold snowy/rainy weather we have been having. I am looking forward to being able to run in the morning without layers and gloves and hat. However, while I impatiently wait for some warmer weather I guess I gives me a reason to make a few more comfort dishes.


The original recipe called for beef and with all recipes that call for beef I used ground turkey. You could also use ground chicken if that is your preference. The fact that you can use your favorite ground meat in this dish is one of reasons why this pasta dish is so good. Plus it is ready in about 30 minutes, making it an even better dish.

Creamy Turkey Pasta

Ingredients:

  • 2 tablespoons olive oil
  • 1/2 cup diced yellow onion
  • 1 pound ground turkey
  • 3 cloves garlic, minced
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/4 cup all purpose flour
  • 28 ounces tomato sauce
  • 1 cup low sodium beef broth
  • 16 ounces rotini pasta
  • 1 cup heavy cream
  • 8 ounces sharp cheddar cheese, shredded
  • grated parmesan cheese, optional

Directions:

  1. Cook the pasta according to the package directions and drain.
  2. In a large skillet, add the oil and heat over medium-high heat. Add in the diced onions and cook until they begin to soften.
  3. Add in the ground turkey and cook until completely cooked. If needed, drain and grease.
  4. Add in the garlic, basil, oregano and flour. Cook, stirring constantly, for 1 minute.
  5. Stir in the tomato sauce and broth. Bring the mixture to a boil and then reduce the heat to a simmer and simmer for 15 minutes.
  6. Add in the cooked pasta and the heavy cream, stirring until well combined.
  7. Add in the cheddar cheese and stir until melted.
  8. Top each serving with parmesan cheese, if desired.

Notes:
You can use any kind of broth you would like, beef, chicken, vegetable. I used beef broth since I add some leftover from another recipe.
