Cream cheese, raspberry and coffee cake all rolled into one delicious breakfast treat, yes please! This coffee cake could not be more up my alley. It's no secret that I love coffee cake, I also love cream cheese and raspberries. So, the combination of all of these together is my kind of coffee cake.
I do not use the word moist often because I know a lot of you out there do not like that word, but it is the best word to describe this coffee cake, it is so light, tender and moist.
Cream Cheese Raspberry Coffee Cake
Ingredients:
- 8 ounces cream cheese, softened
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1 3/4 cups all purpose flour
- 2 eggs
- 1/4 cup sour cream
- 1/2 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 cup raspberry preserves
- powdered sugar
Directions:
- Preheat the oven to 350º F. Grease and flour a 9x13 inch baking pan.
- In a large mixing bowl or the bowl of a stand mixer add in the cream cheese, granulated sugar and butter. Beat on medium speed until fluffy.
- Add in half of the flour, the eggs, sour cream, vanilla baking powder and baking soda. Beat for 2 minutes or until well mixed.
- Add in the remaining flour and beat on low speed until well mixed.
- Spread the batter evenly into the prepared baking pan. Place 8-10 spoonfuls of the preserves around on top of the batter. Using a knife, swirl the preserves into the batter.
- Bake for 30-35 minutes or until an inserted toothpick comes out clean. Place the baking pan on a cooling rack and allow to cool slightly.
- Sift powdered sugar on top of the coffee cake and serve warm.

Notes:
Even though this coffee cake is served warm, it also tastes delicious cold.
