Cheddar Corn Casserole

Cheddar Corn Casserole: Savory Sweet and Satisfying
 
I don't make corn often, not sure why, but after eating this corn casserole I think I need to change that. Not only was this casserole easy to prepare, but it was delicious. I love a vegetable side dish that is easy to prepare. Normally I just microwave frozen veggies, because after work I do not have time to make dinner and a vegetable recipe, so frozen veggies it is. Not only did my family enjoy this casserole, but they liked having something other than our normal frozen veggies.

The only downside, if you can call it a downside, to this recipe was the amount it made. I ended up having to freeze the leftovers, because we could not eat it all before it would have gone bad. The original recipe filled my 9x13 inch baking dish to the top. So I cut the original recipe in half to better fit my family. If you have a bigger family or need to feed a crowd, double the recipe and cook it in a 9x13 inch baking dish.

Cheddar Corn Casserole

Ingredients:

  • 3/4 cup shredded sharp cheddar cheese
  • 3/4 cup shredded Monterey jack cheese
  • 1 tablespoon all purpose flour
  • 1/4 teaspoon black pepper
  • 3 ounces milk
  • 2 ounces cream cheese, softened
  • 1/3 cup sliced green onions(green tops only), divided
  • 1/2 teaspoon hot sauce
  • 30 ounces frozen corn, thawed

Directions:

  1. Preheat the oven to 350º F.
  2. In a medium bowl, toss together both cheeses and flour, set aside.
  3. In a large bowl, stir together the milk, cream cheese and hot sauce. Add in the corn, half of the green onions and the cheese mixture, stir until well mixed.
  4. Transfer the mixture to a 2 1/2 quart baking dish. Cover the baking dish and bake for 30 minutes.
  5. Uncover the baking dish and sprinkle with the remaining green onions. Bake for 5 more minutes.
