Meatball Macaroni and Cheese


For me most meatball recipes fall into my comfort food category. When I found this recipe that combined two of my favorite comfort foods, there was no question if I was going to make it or not. The only question was how my family was going to like it. My girls can be picky at times, like with this recipe. They liked it but said they would rather have meatballs and mac and cheese separate, not together. Well, at least my husband and I both liked it and deemed it a keeper.
 

I used frozen meatballs in this recipe to make it a weeknight meal that I could prepare after work. In about 30 minutes we were eating this yummy, comforting dish. You can make your own meatballs, just cook them before adding to the macaroni and cheese.

Meatball Macaroni and Cheese

Ingredients:

  • 16 ounces elbow noodles
  • 16 ounces frozen meatballs
  • 1 cup shredded cheddar cheese
  • 1 1/2 cups sharp white cheddar cheese
  • 4 ounces cream cheese, softened
  • 1 3/4 cups milk
  • 2 tablespoons unsalted butter, melted and slightly cooled
  • 1 egg, lightly beaten
  • 2 teaspoons garlic powder
  • black pepper, to taste
  • 3/4 cup panko
  • 2 tablespoons unsalted butter, melted

Directions:

  1. Preheat the oven to 350º F. Lightly spray a 9x13 inch baking dish with cooking spray.
  2. Cook the noodles according to the package directions and drain well.
  3. Transfer the noodles to a very large bowl and add in both cheeses. cream cheese, milk, melted butter and garlic powder. Gently stir until well combined and then stir in the egg.
  4. Add in the meatballs and black pepper. Gently stir to combine.
  5. Transfer the mixture to the prepared baking dish.
  6. In a small bowl, stir together the panko and butter until well combined. Evenly sprinkle this mixture over top of the macaroni and cheese.
  7. Bake for 25 minutes or until the meatballs are completely cooked and macaroni and cheese is hot.

Notes:
If the panko is not as browned as you would like after it is done baking, put it under the broiler for a few minutes.
