I love easy dump and go crock pot meals, especially if my kids can get the meal ready. The sauce is creamy and flavorful and tastes great on top of pasta.
I doubled the sauce ingredients from the original recipe because I wanted to make sure we had plenty of sauce for the noodles, plus the chicken breasts I buy tend to be large and serves two people. Therefore I wanted to have plenty of sauce since this would be making about 8 servings.
Crock Pot Creamy Tomato Basil Chicken
Ingredients:
- 2-14 ounce cans Italian diced tomatoes
- 1 1/2 cups spaghetti sauce
- 1 1/2 cups evaporated milk
- 4 tablespoons cornstarch
- 4 teaspoons minced garlic
- 2 teaspoons dried basil
- 1/2 teaspoon black pepper
- 4 large boneless skinless chicken breasts
Directions:
- In a crock pot, stir together the tomatoes and spaghetti sauce.
- In a large glass measuring cup, whisk together the evaporated milk and cornstarch until no lumps remain. Pour the mixture into the crock pot and add in the garlic, basil and black pepper. Stir everything together.
- Add in the chicken pressing it down into the sauce.
- Cover the crock pot and cook on low for 3-5 hours or until the chicken is completely cooked.
- Serve the chicken and sauce over noodles.

Notes:
You can substitute the evaporated milk for heavy cream or half and half.
