Sopa de Fideo (Noodle Soup): Savory Sweet and Satisfying

Ever since I helped my oldest daughter look up authentic Hispanic recipes I have been seeing these types of recipes pop up on my Pinterest feed. The name of this soup literally means soup of noodle. The taste reminds me of spaghetti, but in a soup form.

Not only is this soup delicious, it is super easy. With as little as 5 minutes of prep and about a total of 30 minutes cooking time you can be enjoying this soup. And to make it even better, it does not call for any hard to find or unusual ingredients, well it does call for one, but you can make an easy substitution.

In Spanish, fideo means noodle, but the word actually refers to a specific kind of noodle. The noodle is short, like cut spaghetti noodles and it is thin, thinner than spaghetti, but thicker than angel hair, kind of like vermicelli. I was unable to find fideos at my grocery store and they did not vermicelli, so I used angel hair noodles and broke them into 2 inch pieces.

Sopa de Fideo (Noodle Soup)

Ingredients:

  • 2- 14.5 ounce cans fire roasted died tomatoes
  • 1 medium yellow onion, chopped
  • 1 teaspoon minced garlic, about 1 large clove
  • 1/2 teaspoon ground cumin
  • 6 cups low sodium vegetable broth
  • 2 tablespoons olive oil
  • 8 ounces fideo pasta

Directions:

  1. In a blender, add in the tomatoes, onions, garlic, cumin and 1 cup broth. Blend until completely smooth.
  2. Heat a medium saucepan over medium-high heat. Add on 1 tablespoon of olive oil and the blender tomato sauce. Cook for 5 minutes, stirring occasionally. Remove from the heat and set aside.
  3. Heat a large pot over medium-high heat. Add in the remaining tablespoon of olive oil and the noodles. Fry the noodles for 3-4 minutes, stirring constantly, or until the pasta has begun to brown and blister a little.
  4. Pour in the tomato sauce and the remaining 5 cups of broth. Stir to combine everything together. Cover the pot and cook for 20 minutes or until the noodles are completely cooked.
