Mint and peppermint extract can be tough to work with. A little bit goes a long way and if you use too much it will ruin whatever you are making or it will taste like toothpaste. I always get a little anxious when using those extracts, because of course, I want whatever I am making to turn out well.
This hot chocolate has just the right amount of mint flavor. Enough to know it is there without being too overpowering. The white chocolate and mint flavor blend well together and of course you can't have hot chocolate without some whipped cream. Plus what would mint hot chocolate be without some crushed Andes mints on top. Those mint candies are so delicious!
