These pancakes are everything we love about pancakes, soft and fluffy, but with the added health benefits that oats have. I also noticed that I stayed fuller longer than "normal" pancakes, thanks to the oats.
Oatmeal Pancakes
Ingredients:
- 1 1/2 cups all purpose flour
- 1/2 cup old fashioned rolled oats
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1 tablespoon granulated sugar
- 1 egg
- 2 tablespoons canola oil
- 1 1/4 cups milk
- 1/2 teaspoon vanilla extract
Directions:
- Preheat a griddle over medium- to medium-low heat.
- In a large bowl, whisk together the flour, oats, baking powder and soda, cinnamon and sugar.
- Make a well in the middle of the dry ingredients and add in all of the remaining ingredients, the wet ingredients.
- Whisk everything together until the batter is mostly smooth, with the exception of the oats.
- Allow some butter to melt on the griddle and coat the griddle with the melted butter.
- Using a 1/4 cup measuring cup, scoop out the batter and pour onto the hot griddle. Cook until golden brown, flip over and cook the other side until golden brown. Continue this process with the remaining batter, adding more butter to the griddle as needed.
