Buffalo Chicken Jalapeño Popper Casserole: Savory Sweet and Satisfying

It is no secret that I love spicy food. The combination of buffalo flavor and jalapeños is a winning combination for anyone who loves spicy foods. Combine that spiciness with a cheesy chicken casserole and I have a dinner that makes me come back for seconds. 

An easy way to control the level of spiciness in this casserole is by removing the seeds in the jalapeños. You can remove the seeds from all of the jalapeños or 1 or 2 of them. I left the seeds in the 3 jalapeños in the casserole, but removed the seeds from the jalapeños on the top.

Buffalo Chicken Jalapeño Popper Casserole

Ingredients:

  • 2 pounds boneless skinless chicken breasts, cooked and shredded
  • 6 slices bacon
  • 4 medium jalapeños
  • 12 ounces cream cheese, room temperature
  • 1/4 cup mayonnaise
  • 1/4 cup Frank's Red Hot sauce
  • black pepper, to taste
  • 4 ounces sharp cheddar cheese, shredded
  • 2 ounces mozzarella cheese, shredded

Directions:

  1. Preheat the oven to 400º F. Lightly spray a 9x13 inch baking dish with cooking spray.
  2. Chop the bacon into pieces and dice 3 of the jalapeños, removing some or all of the seeds to control the level of spiciness.
  3. In a large skillet, over medium heat, cook the bacon until mostly crispy. Add in the diced jalapeños and cook until softened.
  4. Add in the cream cheese, mayonnaise and hot sauce. Stir until the cream cheese is melted and everything is mixed together. Season with black pepper.
  5. Spread the cooked and shredded chicken to the prepared baking dish and spread the cream cheese mixture over top. Sprinkle the cheddar and mozzarella cheese over top.
  6. Cut the remaining jalapeño into slices and remove the seeds if desired. Place the jalapeños on top of the cheese.
  7. Bake for 10-15 minutes or until the cheese has melted. Place the casserole under the broiler for 3-5 minutes or until the cheese is lightly browned.

Notes:
If the chicken is cold you will want to warm it before adding it to the casserole or you will have to increase the baking time to make sure the chicken comes out warm.
