Growing up my mom would occasionally make baked rice pudding. It wasn't until a few years ago that I had rice pudding again. Eating it again reminded me of how good it is, but also under appreciated. This realization sent me looking for various rice pudding recipes and I discovered different flavors of rice pudding and have been enjoying trying them out ever since.
This rice pudding takes my love of white chocolate and rediscovered taste for rice pudding and combines them into a delicious dessert, that I don't feel quite so guilty eating.
White Chocolate Rice Pudding
Ingredients:
- 4 cups half and half
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- small pinch nutmeg
- 1 cup arborio rice
- 3 ounces white chocolate, chopped into small pieces
Directions:
- In a medium saucepan, over high heat, add in the milk, sugar, vanilla and nutmeg. Stir to mix.
- Stir in the rice and bring the mixture to a boil. Reduce the heat to low and cook for 30 minutes, stirring frequently, until the half and half has been absorbed.
- Remove the pan from the heat and add in the white chocolate and stir until completely melted and well mixed.
