Disney Churro Toffee Copycat: Savory Sweet and Satisfying

So it has come to my attention that Disney has this churro toffee. Seeing how much I love toffee I had to check this out. The churro toffee that Disney makes is toffee that is completely covered in white chocolate and then sprinkled with cinnamon sugar. This version is a simpler way to make their churro toffee. Instead of dipping the toffee into white chocolate to completely cover it, the white chocolate is spread onto of the toffee and then sprinkle with cinnamon sugar.

Holy moly this toffee is absolutely, completely and totally amazing and delicious. Ever time I went into the kitchen I grabbed a piece or two or three. I could not stop eating this churro toffee and was a little sad when it was all gone. Between me, my husband and two kids this toffee did not last long!

Disney Churro Toffee Copycat

Ingredients:

  • 1 cup unsalted butter
  • 1 cup granulated sugar
  • 3 tablespoons water
  • 1 tablespoon light corn syrup
  • 1 teaspoon vanilla extract
  • 8 ounces good quality white chocolate
  • 1/4 cup granulated sugar
  • 2 teaspoons ground cinnamon

Directions:

  1. Line a 9x13 inch pan with aluminum foil and spray with cooking spray or line the pan with parchment paper.
  2. In a heavy 2-quart saucepan, over low heat, melt the butter.
  3. Stir in 1 cup of sugar, water and corn syrup. Bring the mixture to a boil over medium-high heat, gently stirring constantly, until the sugar is dissolved. Stir gently, trying not to splash the sides of the pan or the sugar will stick and crystalize.
  4. Once the sugar has dissolved, place a candy thermometer in the pan and cook over medium heat, stirring frequently, until the candy thermometer reaches 290º F. This will take about 10-14 minutes. Adjust the heat as necessary to keep the mixture at a uniform boil throughout the throughout the cooking time. Watch the mixture carefully, it can reach the temperature quickly, especially during the last 5 minutes.
  5. As soon as the mixture reaches 290º F. Turn off the heat and quickly stir in the vanilla. Pour the mixture into the prepared pan and allow it to cool just until the top is set, about 4-5 minutes.
  6. Meanwhile, place the white chocolate into a small microwave safe bowl and microwave on 50% power in 30 seconds increments, stirring after each increment, until completely melted and smooth.
  7. In another small bowl stir together the 1/4 cup sugar and cinnamon.
  8. Drizzle the melted chocolate over the slightly cooled toffee and spread into an even layer. Sprinkle the cinnamon sugar mixture over top.
  9. Let the mixture sit on the counter or in the refrigerator until set, about 3 hours.
  10. Remove the toffee from the pan using the foil to lift it out of the pan. Break the toffee into pieces and store in an airtight container on the counter for up to two weeks.
