Butterscotch Banana Muffins

Butterscotch Banana Muffins: Savory Sweet and Satisfying

These muffins did not turn out quite a pretty as I'd hoped, you do eat with your eyes first. But oh my are they delicious. Banana muffins and butterscotch are such a delicious combination.

I feel like I need to use butterscotch more often, I really like the flavor, but just don't think to use it often. Maybe a I need to do a search for recipes using butterscotch. My oldest would like that since she is a huge fan of butterscotch. 

Butterscotch Banana Muffins

Ingredients:

  • 1 cup unsalted butter, room temperature
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 egg
  • 1 1/2 cups mashed ripe bananas, about 3-4 bananas
  • 2 teaspoons vanilla extract
  • 2 1/4 cups all purpose flour
  • 1 1/2 teaspoons baking powder
  • 3/4 teaspoon baking soda
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1 1/3 cups butterscotch chips, divided

Directions:

  1. Preheat the oven to 350º F. Lightly spray the bottom of 20 cups in muffin tins with cooking spray and wipe out the excess with a paper towel.
  2. In a large bowl, beat the butter and both sugars until light and fluffy. Mix in the eggs, bananas and vanilla.
  3. In another large bowl, whisk together the flour, baking powder, baking soda, cinnamon and nutmeg.
  4. Slowly beat the flour mixture into the butter mixture.
  5. Gently stir in 1 cup of butterscotch chips and let the batter rest for 10 minutes.
  6. Spoon the batter evenly between the prepared muffin tins. Top the batter with the remaining butterscotch chips
  7. Bake for 20 minutes or until an inserted toothpick comes out with just a few moist crumbs.
  8. Let the muffins cool in the muffin tin for 2-3 minutes, then gently loosen the muffins from the pan and remove them to a cooling rack.
