These muffins did not turn out quite a pretty as I'd hoped, you do eat with your eyes first. But oh my are they delicious. Banana muffins and butterscotch are such a delicious combination.
I feel like I need to use butterscotch more often, I really like the flavor, but just don't think to use it often. Maybe a I need to do a search for recipes using butterscotch. My oldest would like that since she is a huge fan of butterscotch.
Butterscotch Banana Muffins
Ingredients:
- 1 cup unsalted butter, room temperature
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1 egg
- 1 1/2 cups mashed ripe bananas, about 3-4 bananas
- 2 teaspoons vanilla extract
- 2 1/4 cups all purpose flour
- 1 1/2 teaspoons baking powder
- 3/4 teaspoon baking soda
- 1 1/2 teaspoons ground cinnamon
- 1/2 teaspoon nutmeg
- 1 1/3 cups butterscotch chips, divided
Directions:
- Preheat the oven to 350º F. Lightly spray the bottom of 20 cups in muffin tins with cooking spray and wipe out the excess with a paper towel.
- In a large bowl, beat the butter and both sugars until light and fluffy. Mix in the eggs, bananas and vanilla.
- In another large bowl, whisk together the flour, baking powder, baking soda, cinnamon and nutmeg.
- Slowly beat the flour mixture into the butter mixture.
- Gently stir in 1 cup of butterscotch chips and let the batter rest for 10 minutes.
- Spoon the batter evenly between the prepared muffin tins. Top the batter with the remaining butterscotch chips
- Bake for 20 minutes or until an inserted toothpick comes out with just a few moist crumbs.
- Let the muffins cool in the muffin tin for 2-3 minutes, then gently loosen the muffins from the pan and remove them to a cooling rack.
