My kids are really missing out on this salad. Apparently they do not like fruit in their salad and ranch dressing does not go with oranges. I need to find a way to broaden their horizon when it comes to salad dressings. My youngest is slightly better she will also use Italian dressing, not just ranch like my oldest.
This salad is so very delicious! From the roasted cashews, to the sweet oranges to the delicious homemade dressing, crunchy low mein noodles and most delicious, flavorful and tender chicken this salad is sure to be a hit.
Even though the salad as a whole is delicious, the chicken really stands out in this salad. It turns out so flavorful and tender, not dry at all. I would totally make and serve this chicken outside of this salad, adding a vegetable and another side to make it a complete meal.
Asian Chicken Salad with Peanut Dressing
Ingredients:
Chicken and Marinade
- 2 pounds boneless skinless chicken breasts
- 1 cup teriyaki sauce
- black pepper, to taste
Salad
- 1 head romaine lettuce, roughly chopped
- 10 ounce bag coleslaw with carrots
- 11 ounce can mandarin oranges, drained
- 1/2 cup roasted cashews
- 4 green onions, thinly sliced
- 3/4 cup chow mein noodles
Peanut Dressing
- 5 tablespoons smooth peanut butter
- 2 tablespoons reduced sodium soy sauce
- 1 1/2 tablespoons rice wine vinegar
- 1 tablespoon brown sugar
- 1 clove garlic, minced
- 1/4 cup warm water
Directions:
- In a small bowl, whisk together all of the dressing ingredients until well mixed and smooth. Refrigerate until ready to serve.
- In a large container with a lid or a gallon sized sealable bag add the chicken and teriyaki sauce, coating the chicken with teriyaki sauce.Seal the bag or close the container and refrigerate for at least 2 hours or up to 2 days.
- Remove the chicken from the marinade, season with black pepper and cook your preferred way.
- While the chicken cooks, place the lettuce into a large bowl and top with the coleslaw mix, mandarin oranges, cashews and green onions.
- Once the chicken is completely cooked, dice and add to the salad. Gently toss the salad to combine.
- Top each serving with the chow mein noodles and salad dressing.

Notes:
You could add the chow mein noodles and salad dressing to the salad before you toss it, but if you have any leftovers the chow mein noodles will get soggy in the refrigerator.
