I really like twice baked potatoes, the creaminess of the filling and the crispy skin make for a delicious way to enjoy a potato and the work is so worth it. I also love, love, love, love jalapeño poppers. If you have been following my blog for some time you know my love of spicy foods, especially jalapeño poppers. In fact, I have a whole blog post dedicated to jalapeño popper inspired recipes.
This combination was just meant to be. The creamy filling mixed with spicy jalapeños, this is my new favorite way to enjoy a twice baked potato.
Jalapeño Popper Twice Baked Potatoes
Ingredients:
- 3.75 pounds russet potatoes
- olive oil
- 8 ounces cream cheese, room temperature
- 3 tablespoons unsalted butter, room temperature
- 14 ounces bacon, cooked and crumbled
- 8 ounces shredded cheddar cheese
- 5 jalapeños, seeds removed and finely diced
- 3/4 teaspoon garlic powder
- black pepper, to taste
- sour cream
Directions:
- Preheat the oven to 350º F.
- Using a fork, stab the potatoes a few times all around. Lightly coat the potatoes in olive oil and place on a baking sheet.
- Bake for 60-70 minutes or until the skin is crispy and the potato is fork tender.
- Increase the oven temperature to 425º F.
- Once the potatoes are cool enough to handle, cut in half and scoop out the flesh, leaving a little bit on the skin, and place into a large bowl. Place the potato skins onto the baking sheet.
- To the large bowl, add in the cream cheese, butter, 3/4 of the shredded cheese, jalapeños and bacon, the garlic powder and black pepper.
- Evenly divide the filling among the potato skins and top with the remaining shredded cheese, jalapeños and bacon.
- Bake for 15 minutes or until the cheese is melted and starting to lightly brown.
- Serve with sour cream.
