Cheesy Garlic Sausage and Bacon Carbonara: Savory Sweet and Satisfying

Pasta carbonara is delicious, but it may not be as filling to some as it is to others. My husband sees it as a side dish instead of a main dish like I see it. However, if you add some delicious smoked sausage to pasta carbonara it becomes a more filling main dish for dinner. 

We all love the addition of the smoked sausage. But then again, smoked sausage is a favorite at our house.

Cheesy Garlic Sausage and Bacon Carbonara

Ingredients:

  • 4 tablespoons unsalted butter, room temperature
  • 2 whole eggs
  • 2 egg yolks
  • 1 cup shredded parmesan cheese
  • 1 1/2 pounds spaghetti noodles
  • 1/2 pound bacon, cut into 1/4 inch pieces
  • 1 pound smoked sausage, cut into 1/4 inch slices
  • 1 teaspoon minced garlic
  • 1 teaspoon red pepper flakes
  • 1 1/2 cups heavy cream
  • black pepper, to taste

Directions:

  1. In a small bowl, cream the butter by beating it against the side of the bowl with a spoon until it is soft and fluffy. set aside.
  2. In another small bowl with a whisk, beat the whole eggs and egg yolks until well blended. Stir in  parmesan cheese and set aside.
  3. In a large pot, cook the pasta according to the package directions, cooking to al dente.
  4. Meanwhile, in a large skillet, over medium-high heat cook the bacon until crispy. Remove the bacon and some of the bacon fat. 
  5. Add the sliced sausage to the skillet and cook until starting to brown on both sides. Stir in the minced garlic and red pepper flakes.
  6. Pour in the heavy cream and bring to a simmer. Reduce the heat to low and keep warm.
  7. As soon as the pasta is done, quickly drain and return back to the hot pot. Using tongs, mix in the creamed butter until the pasta is evenly coated in the butter. 
  8. Using the tongs again, mix in the bacon and the sausage cream mixture.
  9. While tossing the pasta, slowly pour in the beaten eggs. Continue to toss the pasta with the tongs until everything is throughly mixed. Season with black pepper.
  10. Serve the pasta immediately.
