This meal is one of those meals that pleased my whole family. These types of meals are becoming more rare these days, as I seem to have trouble making a meal that everyone in the family loves.
To say this dish is delicious is an understatement. It helped to end a bad day on a pretty good and delicious note. Plus it was ready to eat in about 30 minutes. The only downside to this dish is it is best eaten right after it is made. If you have any leftovers and refrigerate them the Fritos will get soggy.
Barbecue Bacon Cheeseburger Frito Pie
Ingredients:
- 1 pound ground turkey
- 1 cup diced yellow onions
- 1 cup barbecue sauce
- 1/3 cup real bacon bits
- 4 cups Fritos corn chips
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 1/4 cup real bacon bits
- 1/2 cup French's fried onions
Directions:
- Preheat the oven to 400 F. Lightly spray a 9x13 inch baking dish with cooking spray.
- In a large skillet over medium-high heat, cook the ground turkey and onions until the meat is completely cooked. Drain any excess liquid.
- Stir in the barbecue sauce until the ground turkey is well coated, then stir in the bacon bits. Remove the skillet from the heat.
- Evenly spread the corn chips into the prepared baking dish.
- Spoon the ground turkey mixture evenly over the chips.
- Sprinkle both cheeses over top of the ground turkey, followed by the bacon bits and fried onions.
- Bake for 5 minutes or until the cheese is melted.
- Serve immediately.
Notes:
My favorite barbecue sauce is Sweet Baby Ray's and that is what I used in this dish.
