Occasionally I make a recipe that calls for taco or Mexican cheese blend. Since I buy block cheese and do not like to buy shredded cheese, I decided to create my own. It is really easy to make your own cheese blends, it just takes a few minutes and then you can avoid all the unnecessary ingredients in the pre-shredded cheese.
The main difference between Mexican cheese blend and taco cheese blend in the addition of seasonings. Mexican cheese blend does not have seasonings in it, where taco cheese blend has some seasonings in it. They are both made with a combination of cheddar cheese and Monterey jack cheese.
Mexican/Taco Style Cheese

Notes:
To make Mexican cheese blend, just use the cheddar cheese and Monterey jack cheese. To make taco cheese blend, follow the recipe as written with the taco seasoning.
