Italian Noodles with Spicy Sausage: Savory Sweet and Satisfying

Italian Noodles with Spicy Sausage: Savory Sweet and Satisfying

I have never had Thai food, so I do not know what the Thai version of this recipes tastes like. However, I can tell you this Italian version is absolutely delicious. Spicy sausage with onions and peppers tossed in light wine sauce and noodles. The original recipe called for pappardelle noodles. I could not find those at my regular grocery store so I substitute Fettuccine noodles, which is the thickest noodle I could find.

Italian Drunken Noodles with Spicy Sausage

Ingredients:

  • 8 ounces fettuccine noodles
  • 4-5 tablespoons olive oil
  • 4 spicy sausage links, casings removed
  • 1 large yellow onion, quartered and thinly sliced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon freshly cracked black pepper
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 orange bell pepper, thinly sliced
  • 4 cloves garlic, minced
  • 1/2 cup dry white wine
  • 28 ounce can diced tomatoes
  • 2 teaspoons dried parsley
  • 2 teaspoons dried basil

Directions:

  1. Prepare the noodles according to the package directions, drain well and keep warm.
  2. In a large skillet, add 2 tablespoons of olive oil and heat over medium-high heat.
  3. Crumble the sausage into small chunks into the skillet. Allow the sausage to brown in the oil for a few minutes on each side. Once the sausage is browned and cooked through, remove from the skillet with a slotted spoon and place into a bowl and set aside.
  4. Add the onions to the sausage drippings in the skillet and stirring constantly let the onion caramelize and become golden brown, about 5 minutes.
  5. Stir in the Italian seasoning and black pepper.
  6. Add in the bell peppers and sauté for about 2 minutes or until slightly tender.
  7. Stir in the garlic and cook stirring constantly until fragrant, about 1 minute.
  8. Pour in the white wine and allow it to reduce for a few minutes, until almost completely reduced.
  9. Add in the diced tomatoes along with the juice in the can, the browned sausage, parsley and basil. Gently stir and allow to simmer for about 3-4 minutes.
  10. Remove the skillet from the heat and drizzle in 2-3 tablespoons olive oil.
  11. Add in the noodles and gently toss with tongs to combine. Season with additional black pepper if desired.
