This recipe is an Italian version of a Thai Drunken Noodle recipe. Check out The Cozy Apron for more information on how this Italian version came to be.
I have never had Thai food, so I do not know what the Thai version of this recipes tastes like. However, I can tell you this Italian version is absolutely delicious. Spicy sausage with onions and peppers tossed in light wine sauce and noodles. The original recipe called for pappardelle noodles. I could not find those at my regular grocery store so I substitute Fettuccine noodles, which is the thickest noodle I could find.
Italian Drunken Noodles with Spicy Sausage
Ingredients:
- 8 ounces fettuccine noodles
- 4-5 tablespoons olive oil
- 4 spicy sausage links, casings removed
- 1 large yellow onion, quartered and thinly sliced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon freshly cracked black pepper
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1 orange bell pepper, thinly sliced
- 4 cloves garlic, minced
- 1/2 cup dry white wine
- 28 ounce can diced tomatoes
- 2 teaspoons dried parsley
- 2 teaspoons dried basil
Directions:
- Prepare the noodles according to the package directions, drain well and keep warm.
- In a large skillet, add 2 tablespoons of olive oil and heat over medium-high heat.
- Crumble the sausage into small chunks into the skillet. Allow the sausage to brown in the oil for a few minutes on each side. Once the sausage is browned and cooked through, remove from the skillet with a slotted spoon and place into a bowl and set aside.
- Add the onions to the sausage drippings in the skillet and stirring constantly let the onion caramelize and become golden brown, about 5 minutes.
- Stir in the Italian seasoning and black pepper.
- Add in the bell peppers and sauté for about 2 minutes or until slightly tender.
- Stir in the garlic and cook stirring constantly until fragrant, about 1 minute.
- Pour in the white wine and allow it to reduce for a few minutes, until almost completely reduced.
- Add in the diced tomatoes along with the juice in the can, the browned sausage, parsley and basil. Gently stir and allow to simmer for about 3-4 minutes.
- Remove the skillet from the heat and drizzle in 2-3 tablespoons olive oil.
- Add in the noodles and gently toss with tongs to combine. Season with additional black pepper if desired.
