Banana Toffee Coffee Cake: Savory Sweet and Satisfying

 I don't think I have ever made just plain old banana bread. I really like adding different flavors to my banana breads. I think it tastes better that way.

This latest version takes banana bread and coffee cake and brings them together with delicious toffee and chocolate chips.

Eating one piece of this coffee cake was very hard for me. It was so delicious, I could taste the toffee, chocolate and banana flavors. I think next time I will need to cut my pieces a little bit bigger.

Banana Toffee Coffee Cake

Ingredients:

  • 8 ounces cream cheese, room temperature
  • 1/2 cup unsalted butter, room temperature
  • 3/4 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 cup mashed ripe bananas (about 2-3 medium)
  • 2 teaspoons vanilla extract
  • 2 1/4 cups all purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 cup toffee bits
  • 1/2 cup mini chocolate chips
  • 2 tablespoons packed brown sugar
  • 2 teaspoons ground cinnamon

Directions:

  1. Preheat the oven to 350º F. Spray a 9x13 inch baking dish with cooking spray.
  2. In a small bowl, combine the toffee bits, mini chocolate chips, brown sugar and cinnamon.
  3. In a large bowl, with an electric mixer, beat together the cream cheese, butter and both sugars until light and fluffy.
  4. Add in the eggs, mashed bananas and vanilla. Beat until well mixed.
  5. In medium bowl, whisk together the flour, baking powder and baking soda. Slowly beat the flour mixture into the cream cheese mixture.
  6. Spread half of the batter into and even layer into the prepared baking dish. Evenly sprinkle half of the toffee mixture over the batter.
  7. Gently spread the remaining batter over the toffee mixture and evenly sprinkle the remaining toffee mixture on top of the batter.
  8. Bake for 40-45 minutes or until and inserted toothpick comes out with just a few moist crumbs.
  9. Allow the coffee cake to cool completely in the pan before cutting and serving.
