Buffalo Chicken Salad

 


Taco salad is one of my favorite salads, but this buffalo chicken salad could almost beat that. I love buffalo flavored chicken and when added to a salad and topped with Doritos and ranch it becomes a salad I go back for seconds.

Buffalo Chicken Salad

Ingredients:

  • 6 tablespoons Frank's Red Hot Sauce
  • 4 tablespoons unsalted butter, melted
  • 2 cups cooked shredded chicken
  • 1 head romaine lettuce, chopped
  • 2 jalapenos, sliced
  • 16 ounces grape tomatoes, sliced in half
  • 15 ounce can black beans, rinsed and drained
  • 6 ounces shredded cheddar cheese
  • crushed Doritos
  • ranch dressing

Directions:

  1. ​In a large bowl, whisk together the melted butter and buffalo sauce. Add in the shredded chicken and stir to mix well.
  2. In a large bowl add the lettuce, buffalo chicken, sliced jalapeƱos, tomatoes, black beans and shredded cheddar cheese and toss to combine.
  3. Top each serving with desired amount of crushed Doritos and drizzle with ranch dressing and a little bit of hot sauce, if desired.
