Taco salad is one of my favorite salads, but this buffalo chicken salad could almost beat that. I love buffalo flavored chicken and when added to a salad and topped with Doritos and ranch it becomes a salad I go back for seconds.
Buffalo Chicken Salad
Ingredients:
- 6 tablespoons Frank's Red Hot Sauce
- 4 tablespoons unsalted butter, melted
- 2 cups cooked shredded chicken
- 1 head romaine lettuce, chopped
- 2 jalapenos, sliced
- 16 ounces grape tomatoes, sliced in half
- 15 ounce can black beans, rinsed and drained
- 6 ounces shredded cheddar cheese
- crushed Doritos
- ranch dressing
Directions:
- In a large bowl, whisk together the melted butter and buffalo sauce. Add in the shredded chicken and stir to mix well.
- In a large bowl add the lettuce, buffalo chicken, sliced jalapeƱos, tomatoes, black beans and shredded cheddar cheese and toss to combine.
- Top each serving with desired amount of crushed Doritos and drizzle with ranch dressing and a little bit of hot sauce, if desired.
