Oven Baked Salmon with Garlic Butter Bread Crumbs: Savory Sweet and Satisfying

I have been having good lately with fish recipes. The last half a dozen or so I have made have all turned out and the two fish eaters in my household loved them and wanted me to keep the recipe to make again. I wish I was having the same kind of luck with my other recipes I have been making. Some have not been keepers and others I have had to tweak and remake several times.

Salmon coated in bread crumbs and cheese sounds and looks so good. Too bad I don't like fish, because this looks good. I wonder if I could try this method with chicken? I love being able to put the fish on a backing sheet and then pile on the topping. No messy dredging process is definitely nice.

Oven Baked Salmon with Garlic Butter Bread Crumbs

Ingredients:

  • 1 1/2 pounds salmon filets
  • 1/4 cup unsalted butter, melted
  • 3 cloves garlic, minced
  • 3/4 cup Italian seasoned bread crumbs
  • 1/4 cup shredded parmesan cheese

Directions:

  1. Preheat the oven to 400º F. Lightly spray a baking sheet with cooking spray.
  2. Using paper towels, pat the salmon dry and place onto the baking sheet.
  3. In a medium bowl, stir together the melted butter, mince garlic, breadcrumbs and parmesan cheese until well mixed.
  4. Spread the bread crumb mixture over top of the salmon and press into an even layer, covering the top and sides of the salmon.
  5. Bake for 10-15 minutes or until completely cooked.
