I have been having good lately with fish recipes. The last half a dozen or so I have made have all turned out and the two fish eaters in my household loved them and wanted me to keep the recipe to make again. I wish I was having the same kind of luck with my other recipes I have been making. Some have not been keepers and others I have had to tweak and remake several times.
Salmon coated in bread crumbs and cheese sounds and looks so good. Too bad I don't like fish, because this looks good. I wonder if I could try this method with chicken? I love being able to put the fish on a backing sheet and then pile on the topping. No messy dredging process is definitely nice.
Oven Baked Salmon with Garlic Butter Bread Crumbs
Ingredients:
- 1 1/2 pounds salmon filets
- 1/4 cup unsalted butter, melted
- 3 cloves garlic, minced
- 3/4 cup Italian seasoned bread crumbs
- 1/4 cup shredded parmesan cheese
Directions:
- Preheat the oven to 400º F. Lightly spray a baking sheet with cooking spray.
- Using paper towels, pat the salmon dry and place onto the baking sheet.
- In a medium bowl, stir together the melted butter, mince garlic, breadcrumbs and parmesan cheese until well mixed.
- Spread the bread crumb mixture over top of the salmon and press into an even layer, covering the top and sides of the salmon.
- Bake for 10-15 minutes or until completely cooked.
