These cranberry overnight oats were created when I discovered a package of slivered almonds that I must have bought for a recipe but never made or did not end up using. I then ended up using some dried cranberry and honey for a little sweetness and some cinnamon for warmth.
Even though I am not the biggest fans of nuts in my oats, these were pretty delicious and I did enjoy the crunch the almonds provided.
Cranberry Almond Overnight Oats
Ingredients:
- 1/2 cup old fashioned rolled oats
- 1/2 cup milk
- 1 teaspoon honey
- 2 tablespoons dried cranberries
- 2 tablespoons sliced almonds
- 1/4 teaspoon cinnamon
Directions:
- In a mason jar or other sealable container, stir together the oats, milk and honey, until the honey is well mixed in.
- Add in the cranberries, almonds and cinnamon, stirring to mix.
- Place the lid on the container and refrigerate overnight.
- In the morning, stir the oats well before eating.

Notes:
You could also use sliced almonds or chop up some whole almonds. If you don't have almonds, you could try these with your favorite type of nut or whatever type you have on hand.
You could also change up the flavor by trying different types of dried fruit.
