There is no mistaking these are key lime muffins. The key lime flavor comes through very well. My husband took a bite and said "Yup! These are key lime. You definitely have to like key lime to like these muffins.". Good thing I don't just like key lime, I love it, so therefore I love these muffins!
Coconut Key Lime Muffins
Ingredients:
- 1 1/2 cups all purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 8 tablespoons unsalted butter
- 1 cup granulated sugar
- 2/3 cup non fat Greek yogurt
- 2 eggs
- 3 tablespoons key lime juice
- 1 tablespoon key lime zest
- 3/4 cup sweetened shredded coconut
Key Lime Glaze
- 4 tablespoons powdered sugar
- 1 tablespoon key lime juice
Directions:
- Preheat the oven to 350º F. Spray a muffin tin with cooking spray or line with paper liners.
- In a medium bowl, whisk together the flour, baking powder and baking soda.
- In a large bowl, beat the butter and sugar until light and fluffy. Add in the yogurt, eggs, key lime juice and zest, beating until well combined.
- Add in the dry ingredients and stir just until combined.
- Divide the batter between the prepared muffin tins, filling about 2/3 full and top with coconut.
- Bake for 18-20 minutes or until an inserted toothpick comes out clean.
- Remove the muffins from the muffin tin and transfer to a cooling rack and allow to cool completely.
- In a small bowl, whisk together the powdered sugar and key lime juice. Drizzle the glaze over each muffins and allow to set.

Notes:
I used bottled key lime juice and lime zest.
If the glaze is too thin add a little more powdered sugar, if the glaze is too thick add a little bit more key lime juice.
