If you've been following or reading this blog for awhile now, then you know I love nachos! I love them so much I can't say no to them at a Mexican restaurant. So it only seemed to make sense to combine my love of nachos and love of corned beef into one delicious meal. These nachos were so very good that I could not stop eating them. I kept going back for more and more.
Crispy waffles fries are topped with corned beef, sauerkraut and plenty of cheese, both white cheddar and the traditional Swiss cheese found in a rueben sandwich and then drizzled with thousand island dressing. For the picture I only drizzled on a little bit because I did not want to accidentally add too much so I thought less was more, but after taking the picture I added more.
Reuben Style Irish Nachos
Ingredients:
- 22 ounce bag frozen waffle fries
- 1 cup shredded Swiss cheese
- 1 cup white cheddar cheese
- 1 cup diced corned beef
- 1/2 cup well drained sauerkraut
- thousand island dressing
Directions:
- On a baking sheet with sides, cook the waffle fries according to the package directions.
- In a medium bowl, toss together both cheeses.
- Sprinkle about 1/3 of the cheeses over the waffle fries, followed by the sauerkraut and corned beef. Sprinkle the remaining cheese on top.
- Preheat the broiler and broil the nachos until the cheese melts.
- Drizzle the nachos with thousand island dressing and serve immediately.
