A fluffernutter typically refers to a sandwich that is made with peanut butter and marshmallow fluff. I recently made this sandwich for the first time and you can check out that post here.
With a jar of fluff in my pantry and some homemade peanut butter syrup in my fridge it dawned on me that I could possible use those flavors in latte. After a few attempts I got the ratio of peanut butter to marshmallow just right.
I used half and half in this latte because I had some in my fridge and no immediate plans for it. You could use regular milk as well and save some calories. To make this latte I flavored the coffee with the peanut butter syrup and whisked the warm half and half with the marshmallow fluff and then poured it over the coffee. Both the peanut butter and marshmallow flavors are subtle, but it was the perfect fluffernutter latte for me. If you want more flavor you can increase the amount of peanut butter syrup and marshmallow fluff.
Fluffernutter Latte
Ingredients:
- 4 ounces strong brewed coffee
- 1 tablespoon peanut butter syrup
- 1/2 cup half and half
- 3 tablespoons marshmallow fluff, slightly rounded
- 1/2 cup water
- 1/2 cup granulated sugar
- 2 tablespoons peanut butter, mounded
- 1 teaspoon vanilla extract
- In a mug, stir the coffee and peanut butter syrup together.
- In a microwave save container, heat the half and half until hot, but not boiling, about 15-20 seconds. Add in the marshmallow fluff and whisk until well combined and mixture is frothy.
- In a medium saucepan, combine the sugar and water.
- Heat over medium-low heat, stirring often, until the sugar has dissolved, about 2-3 minutes.
- Add in the peanut butter and stir constantly until everything is well combined, about 5 minutes.
- Remove the saucepan from the heat and stir in the vanilla extract.
- Refrigerate leftovers in an airtight container in the refrigerator.
