Crispy Chicken Sandwiches with Honey Mustard Coleslaw


Crispy Chicken Sandwiches: Savory Sweet and Satisfying

I love a good chicken sandwich and my husband loves a good coleslaw. When I say a good coleslaw, it better be good, he is very picky about his coleslaw. I have always been hesitant to make coleslaw because he is so picky about it. But this sandwich looked too good to pass up.

This sandwich is such a flavorful one. The chicken is nice and crispy and when paired with melty cheese, spicy pickled jalapeños and delicious coleslaw it is one yummy and filling sandwich.

Crispy Chicken Sandwiches with Honey Mustard Coleslaw

Ingredients:

Chicken Marinade

  • 1/2 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • black pepper, to taste
  • 1 cup buttermilk
  • 3 3/4 teaspoons lemon juice
  • 2 large boneless skinless chicken breasts

Coating

  • 1 1/4 cups all purpose flour
  • 4 tablespoons panko bread crumbs
  • 1/2 teaspoon baking powder
  • 1 teaspoon crushed red pepper flakes
  • 3 teaspoons garlic powder
  • 1 teaspoon ground paprika
  • 1/2 teaspoon ground black pepper
  • 2 eggs
  • 2/3 cup buttermilk
  • 1/3 cup unsalted butter, cut into pieces

Honey Mustard Coleslaw

  • 3 cups shredded white cabbage
  • 1/2 cup peeled and shredded carrot
  • 4 tablespoons mayonnaise, slightly heaping
  • 1 tablespoon dijon mustard, heaping
  • 1 tablespoon honey, heaping
  • 2 teaspoons lemon juice
  • pinch black pepper

Assembly

  • 4 slices munster cheese
  • 4 brioche buns
  • pickled jalapeño slices

Directions:

Marinade

  1. In a large bowl, whisk together all of the marinade ingredients, except for the chicken.
  2. Cut both chicken breasts in half making four pieces.
  3. Add the chicken to the bowl turning to coat well in the marinade. Cover the bowl and refrigerate overnight.

Coating and Baking Chicken

  1. Place a dark baking sheet with a rim in the oven and preheat the oven to 410º F.
  2. In medium shallow bowl, whisk together the flour, panko and spices.
  3. In another medium bowl whisk together the eggs and buttermilk.
  4. Working with one piece of chicken at a time, remove it from the marinade and gently shake off any excess. Dip the chicken into the buttermilk and egg mixture, coating both sides well. Then place into the flour mixture and coat both sides well, gently pressing down to help the mixture stick. Gently shake off an excess flour mixture and set chicken aside. Repeat with the remaining chicken pieces.
  5. Once the oven is preheated, remove the baking sheet and place the butter onto it. Allow the butter to melt completely, placing back in the oven if needed to help melt the butter (watch carefully so the butter does not start to burn). Once the butter has melted, place the chicken pieces onto the baking sheet.
  6. Bake for 10-12 minutes, carefully flip the chicken pieces over and bake an additional 8-12 minutes, or until the chicken is completely cooked through.
  7. Remove the baking sheet from the oven and place 1 slice of cheese on each piece of chicken. Place under the broiler until the cheese has melted.
  8. Remove the baking sheet from the oven and allow the chicken to sit on the baking sheet for 2 minutes, this will allow the chicken to crisp up as it comes out of the oven soft. If you allow the chicken to sit for too long it will begin to turn soggy.

Honey Mustard Coleslaw

  1. In a large bowl, combine all of the coleslaw ingredients, mixing until well combined. Cover and refrigerate until needed.

Assembly

  1. Place the bottom half of the buns on plates and topped with coleslaw. Place chicken on top followed by desired amount of pickled jalapeño slices and top half of bun.

Notes;
I used 2 large chicken breasts and cut then in half. They fit the buns perfectly. If your chicken breasts are not large enough to do this, you could use 4 small ones. You want the chicken to fit the bun without too much hanging out.

The nutritional info is really an estimate. It is hard to determine how much marinade is absorbed during the marinade process. Plus you may not need all of the flour mixture and egg buttermilk mixture depending on how big your chicken is. And it depends on how much coleslaw you use. I included all of the ingredients listed in the ingredient list when calculating the nutritional info, but I do not believe the sandwich is really that high in calories.
