Baked Parmesan Potato Rounds


Oh my, these potatoes! They just might be better than french fries. I could not stop eating these potatoes They are crunchy on the outside, soft of the inside and have a delicious flavor.


These potatoes are best eaten right after they are made. Once they are refrigerated they lose their crispy crunchy. They still taste good and have the delicious flavor, but is just missing the crunchy outside. When baking these potatoes, keep an eye on them, especially the bottom side, because they can go from crunchy to burnt really quickly. As you can see from the photo above some of the potatoes started to get really close to being burnt.

Baked Parmesan Potato Rounds

Ingredients:

  • 3 1/2 pounds yukon gold potatoes
  • 5 tablespoons olive oil
  • 3/4 cup grated parmesan cheese
  • 2 tablespoons garlic powder
  • 2 teaspoons black pepper

Directions:

  1. Preheat the oven to 400º F. Spray 1 large baking sheet or two smaller ones with cooking spray.
  2. Rinse the potatoes and slice them into thin rounds.
  3. Place the potatoes into a large bowl and add in the olive oil. Stir until the potatoes are well coated in olive oil.
  4. Add in the cheese, garlic powder and black pepper. Stir until well combine and evenly coated in the seasonings.
  5. Place the potatoes in an even layer on the prepared baking sheet.
  6. Bake for 30-40 minutes, turning about halfway through the cooking time, until the potatoes are browned and fork tender.

Notes:
The cooking time will depend on how thick you cut the potatoes. The thicker they are cut the longer they will take to bake and the cheese on the outside might burn before the insides are soft and tender. The thinner the potatoes are cut the quicker they will cook.
