Spicy Cajun Sausage Skillet


This recipe is a complete dinner in one skillet. It also happens to be simple to make and taste delicious.

Spicy Cajun Sausage Skillet

Ingredients:

  • 4 tablespoons olive oil
  • 1 1/2 pounds red potatoes, cubed into bite sized pieces
  • 1 cup sliced carrots, 1/4 inch slices
  • 1/2 medium yellow, diced
  • 14 ounces smoked sausage cut into 1/2 inch slices
  • 2 teaspoons cajun seasoning
  • 1/2 teaspoon black pepper
  • 2 tablespoons water
  • 1 pound fresh green beans

Directions:

  1. In a large skillet, heat the oil over medium heat.
  2. Add in the diced potatoes and diced carrots, trying to keep them in a single layer as much as possible. Cook for 15 minutes, or until they begin to soften, stirring occasionally.
  3. Add in the onions, sausage, cajun seasoning and black pepper. Stir to mix and cook for an additional 10 minutes or until the onions are softened and sausage is browned.
  4. Add in the water and the green beans, cover the skillet and cook for 3-4 minutes or until the green beans are tender-crisp and the water has evaporated.

I used turkey sausage.
