This recipe is a complete dinner in one skillet. It also happens to be simple to make and taste delicious.
Spicy Cajun Sausage Skillet
Ingredients:
- 4 tablespoons olive oil
- 1 1/2 pounds red potatoes, cubed into bite sized pieces
- 1 cup sliced carrots, 1/4 inch slices
- 1/2 medium yellow, diced
- 14 ounces smoked sausage cut into 1/2 inch slices
- 2 teaspoons cajun seasoning
- 1/2 teaspoon black pepper
- 2 tablespoons water
- 1 pound fresh green beans
Directions:
- In a large skillet, heat the oil over medium heat.
- Add in the diced potatoes and diced carrots, trying to keep them in a single layer as much as possible. Cook for 15 minutes, or until they begin to soften, stirring occasionally.
- Add in the onions, sausage, cajun seasoning and black pepper. Stir to mix and cook for an additional 10 minutes or until the onions are softened and sausage is browned.
- Add in the water and the green beans, cover the skillet and cook for 3-4 minutes or until the green beans are tender-crisp and the water has evaporated.
Notes:
I used turkey sausage.
